Cooking shrimp is a quick and easy process, and there are plenty of delicious recipes to choose from. Here are a few of our favorites:
Shrimp Scampi: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 1/2 pound of peeled and deveined shrimp to the pan and cook until opaque, about 3 minutes. Add the garlic and lemon juice and cook for an additional minute. Serve over pasta or rice.
Shrimp Tacos: In a small bowl, mix together 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of paprika. Sprinkle the spice mixture over 1/2 pound of peeled and deveined shrimp. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the shrimp to the pan and cook until opaque, about 3 minutes. Serve in tacos with your favorite toppings.
Shrimp Salad: In a bowl, combine 1/2 pound of cooked and cooled shrimp, 2 tablespoons of diced red onion, 2 tablespoons of diced celery, 2 tablespoons of diced green bell pepper, 2 tablespoons of mayonnaise, 2 tablespoons of plain yogurt, 1 tablespoon of fresh lemon juice, and salt and pepper to taste. Serve chilled or at room temperature.
